Mango Cheesecake - Chilled

Finally!

When i eat something i love, i always feel like making it.
Especially bila bayar tu eh ini harga modal je sebenarnya omg kalau buat sendiri ni boleh makan setempayan boleh bagi orang boleh paksa orang makan haha. Dahla boleh tambah apa apa yang kita suka. 

Another feeling is when u wonder:
"Can i make this thing? Will it turn out the way i want it to be?"
You will never know if u never try it.
So people give it a shot!
Because this is among the easiest cheesecake alive!
Takyah oven pun so no more excuse oke girls alasan takda oven tu tak boleh pakai dah.

Chilled Mango Cheesecake.

BASE:

125 gm digestive biscuits
60 gm butter


Method
Mix all ingredients well. Press into base of springform tin. Chill in refrigerator.
Sebenarnya for the base ni depends on your baking pan. Agak-agak je kasi penuh satu baking pan padat-padat takyah measure in gram pun.


FILLING:

500 gm cream cheese
200 gm sugar ( i usually reduce it tak suka manis sangat. Again, depends on your tastebuds )
250 ml whipping cream
2 tbs gelatin
1/4 cup hot water
1tbs lemon juice
1tbs vanilla essence
1-2 ripe sliced mangoes
Drained and mashed mangoes (reserve the juice)


Method
1. Dissolve the gelatine in hot water. 
2. Beat the softened cream cheese until smooth. 
3. Gradually add the sugar, dissolved gelatine, vanilla essence, lemon juice and the 1/4 cup of   reserved juice. Blend well. 
4. Add some mango slices.
5. Beat whipping cream until just stiff. 
6. Fold in cream and drained fruit into cheese mixture. 
7. Pour onto prepared crumb crust. Chill until firm.




Saja letak sliced mango and fold the batter slowly.
Nanti bila makan rasa mango lagi ummph!


TOPPING:


Mash some mangoes and add some mango juice. Dissolve 1/2 tablespoon gelatine in 1/4 cup of hot water, and add any leftover juice to the gelatine solution. Be sure that the cheesecake filling has been chilled for at least 4 hours BEFORE pouring the glaze on top. Otherwise you will find that the glaze topping will just sink and destroy the aesthetics of the cheesecake.

And you can put sliced mangoes on top, susun lawa-lawa. Nipis je hiris jangan tebal kamus dewan pulak.



Close up.



Keep it overnight dalam fridge tau jangan gatal letak sejam je terus nak makan tahula tak sabar.

Esok tu baru bawak keluar dari fridge.
And it's perfectly done!
